Eco-friendly alternative to lemon juice
Beneficiating of rare Cretaceous subsoils (Middle Cenomanian), the Bourgoin vineyard is planted with 100% ugni-white grape variety. The low density of planting, of about 2750 plants per hectare, allows each vine to give 6kg of very acidic grapes, usually for the production of quality cognacs. This natural acidiifier handmade locally from acidic grape juice of the early harvest. Used in the kitchen or in the bar as eco-friendly alternative to lemon juice.
