Notsuke is the name of the region in Hokkaido, Japan where these scallops are produced. This region is particularly well known for having a unique landscape, lower temperature and the waters rich with plankton, which enables the scallops to grow especially big and thick over 4 years. They have a richer umami & sweeter flavour thanks to these special conditions.
